‘Slow cooker BBQ pork chops with cheese and bacon’
Ingredients:
5 sliced medium russet potatoes
1 medium sliced white onion
½ teaspoon salt
¼ teaspoon pepper
1 18 ounces bottle of barbecue sauce (532 mL), divided
1.5 – 2 pounds (680-9 kg) pork chops, bone-in or thick cut boneless
6 slices cooked bacon
6 slices Colby-Jack cheese (or any other of your preference)

1. Begin by laying down slices of potatoes along the bottom of the slow cooker. The Magical Slow Cooker used regular potatoes here, but a nice sweet potato would also be a good substitute!
2. On top of the potato, you’ll add a layer of slice onions, barbecue sauce and finally your pork chops with more barbecue sauce on top. You can add a couple more vegetables if you’d like or you can switch out barbecue sauce for a mixture of your choosing instead. Regardless, you’ll let the entire dish cook for a few hours to get the pork full cooked through and juicy.
You’ll then add the crowning glory of the dish, a few generous slices of cooked bacon and some slices of cheese. Cover the slow cooker and let it cook through for a few minutes to get the cheese nice and gooey. The Magical Slow Cooker used a cheddar / jack cheese, but you could easily substitute your own cheese or use shredded instead of slices.
Once it’s melted, dig your spoon down to the bottom and scoop yourself all those layers of tender potatoes and cheesy pork chops.
