Mexican lasagna taco

°12-13 Soft flour 6 inches tortilla
°2 pounds. Minced beef
°2 packages Taco seasoning
°2C tomato cubes
°1 c cubes red onion
°1/2 C green onion cubes
°1/4 c chopped Jalapeño optional
°Kosher salt to taste
°2C heavy whisk cream
°1/2 stick butter
°3c Taco cheese or grated Mexican cheese
°1.5 teaspoons Cajun seasoning
°Sour cream decorations
°Diced green onion decorations
In a small bowl, combine the red onion, green onion, jalapeño pepper, tomatoes and salt to taste. Set aside.
In a large frying pan, brown meat and discharge grease. Adding taco season & stir.
In a medium saucepan, boil the heavy cream and butter, stirring until condensed. Remove from heat and add 2 cups cheese. Add the cajun seasoning and keep warm.
In 9 × 13 casseroles, layer 4 tortillas (cut so that they fit the bottom of the casserole), chopped beef, cheese and tomato mixture. Repeat until 3 layers with cheese sauce on top.
Add another cup of cheese over a full casserole.
Place in a 400 degree oven covered for 20 minutes then remove and cool. Each serving is decorated with sour cream and scallions.
