Taco Stuffed Bell Peppers

*Ingredients:
°4 medium green bell peppers, cut in half
°1.5 lbs ground beef, roasted
°1 package of taco seasoning mix, or seek out a homemade taco seasoning recipe
°3/4 cup of water
°1-1/2 cups cheddar cheese
°1 cup sour cream
°1/2 cup of sauce
*Instructions
1— Preheat the oven to 350 degrees Fahrenheit. Wash the peppers, then cut them lengthwise in half through the middle and remove the seeds. Place in a casserole dish with 1/4 cup water. Cover and microwave 7 to 10 minutes, or until peppers are tender. Periodically check for maturity.
2- Meanwhile, brown the minced meat until it is completely cooked through. Add taco seasoning and water and cook according to recipe or package directions. After the meat is cooked, mix the sour cream, sauce and 1 cup of cheddar cheese.
3 – Spray a 13″ x 9″ baking dish with nonstick spray. Place the cooked peppers in the dish and generously stuff them with the meat and cheese mixture. Put the remaining cheese on top. Baking at 350°F for 20-30 minutes, until pepper is heated through and cheese is melted. Serve with your favourite taco ingredients & a side salsa.
