This fried chicken and rice recipe has won the hearts of people all over the world!Buttered rice and juicy grilled chicken thighs baked in one pan in less than 10 minutes.Rice absorbs water from the chicken as it cooks, giving it flavor.It’s like boiling rice in homemade broth!
* Ingredients :
° 5 bone in chicken thigh, peel the skin, (note 1)
° 1 onion, chop (brown, white or yellow)
° 2 garlic (large) minced
° ½ tablespoon (30 g) butter (or olive oil)
° 1/2 cup (270 g) uncooked white rice (note 3)
° ½ cup (375 ml) chicken broth / hot broth (microwave)
° 1/4 cup (315 ml) hot water (tap is fine)
Chicken rub (note 2):
° 1 teaspoon paprika powder
° 1 teaspoon dried thyme
° Half a tsp garlic powder
° Half a teaspoon of onion powder
° Quarter teaspoon of salt
° black pepper
° oil mist
° Fresh thyme leaves or finely chopped parsley
* Directions :
Preheat oven 180°C/350°F.
Spread onion and garlic in a baking dish (about 10 x 15 in / 25 x 35 cm), place butter in center, and bake for 15 minutes (check after 12 minutes, mix if some pieces are browning too much).
Meantime, mixing chicken rub jointly .Sprinkling chicken equaly on both sides.
Remove the baking dish from the oven. Add rice, then mix.
Put the chicken on the rice.Then pour in water to cover the chicken and face.Covering with foil & baking about 30 min . Remove the tin foil, spray the chicken with the oil (optional, it adds a nicer touch to the chicken), then bake for another 20 minutes until the liquid has absorbed.Wait 5 minutes, then remove the chicken and add the rice.Garnish with parsley or thyme to taste, serve and enjoy!
