Zucchini patties

°2 large zucchini (about 300 g)
°1 onion or shallot
°1 clove garlic (optional)
°Aromatic herbs: parsley, mint, basil or cilantro
°1 egg
°1 tsp flour
°2 tsp liquid cream
°Salt pepper
°paprika, curry, espelette pepper, etc.
°Butter/Frying Oil
Wash, dry and grate your zucchini. Put it in a clean towel and squeeze well to remove the juice
Finely chop onion or shallot and parsley
Mix with grated zucchini, then add cream and whole egg, mix, and finally flour and salt, pepper and spices, mix
Heat 20 g butter and a little sunflower oil in a frying pan and arrange small piles of preparation, flatten them into pancakes and cook for 3 minutes on each side, until your pancakes are golden brown
Put your pancakes on paper towels and serve them very hot
