°2 large rusty potatoes, cut into 1-inch cubes
° 14 oz. smoked sausage, cut into thin slices
°1 medium sized onion, chopped
°1/2 chopped red or green pepper
°1 minced garlic clove
° 1/4 cup of chicken broth
° 1/2 to 1 1/2 tsp. red pepper
° 1/2 tsp. salt
° 1/2 tsp. Pepper
° 1/2 tsp. dried parsley or 1 TB fresh chopped parsley
° 2 TB of canola oil
* Methods
In a non stick skillet, heat the oil over medium-high heat. Add the smoked sausage and cook until the edges are brown. Remove the sausages from the skillet and place them on a plate lined with paper towels. Add the potatoes as they cook until they begin to brown and become tender. Add onions, bell peppers, and garlic and cook until soft. Add the chicken broth, cover, and cook for 5-6 minutes, stirring occasionally, until the potatoes are tender. Stir in the seasoning and return the sausage to the skillet. Served as a main course with vegetarian on the side.
