Cranberry Apple Pork Loin



Pork loin 2-3 lbs

2 red apples

1 cup whole cranberry sauce

1 Tbsp olive oil

1 teaspoon rosemary leaves

1 teaspoon thyme leaves

1 teaspoon minced garlic

salt and pepper.


Spray a casserole dish with non-stick cooking spray, rub the pork with olive oil and sprinkle with herbs/spices. Surround with apples and cranberries. Cover with tin foil at 350 for 1 1/2 to 2 hours. One serving is 3 ounces of pork and a scoop of apples/cranberries.
